This is one of our favorite easy lunches, and it only takes a few minutes to put together. Our Cranberry Apple Chicken Salad Mix already has the dried cranberries, Northern Spy apple, parsley and garlic blended in, so all you add is mayonnaise and cooked chicken. Use a store-bought rotisserie chicken for a quick lunch or dinner, or use up your leftover turkey after Thanksgiving.
What You Need
- 1 bag SnS Dips Cranberry Apple Chicken Salad Mix
- 3/4 cup real mayonnaise
- 1 pound (16 oz) cooked and shredded chicken, or 1 large can of chicken
You can use leftover turkey in place of the chicken.
How to Make It
- Mix the bag contents with 3/4 cup of real mayonnaise and stir well.
- Add 1 pound of cooked, shredded chicken or turkey (or 1 large can of chicken) and stir until everything is coated.
- Cover and chill for at least 4 hours for the best flavor.
Make It Your Own
The mix is great just as it is, but if you like extra crunch, stir in any of these:
- Diced apple: About 1 small apple. Add it right before serving so it stays crisp.
- Pecans or walnuts: About 1/4 cup, chopped.
- Celery: About 1/4 cup, diced.
- Red grapes: About 1/2 cup, cut in half.
Using Rotisserie Chicken
A store-bought rotisserie chicken makes this even easier. Pull the meat off the bones, shred it with two forks and measure out 1 pound.
Using Leftover Turkey
This is our favorite way to use up Thanksgiving turkey. Shred 1 pound of leftover turkey and use it just like the chicken.
Ways to Serve It
- Sandwiches: Pile it on a bun with lettuce for an easy lunch or dinner.
- Croissants: Perfect for brunch, showers and holiday get-togethers.
- Wraps: Spread it on a flour tortilla with lettuce and roll it up.
- Pinwheels: Spread it on large flour tortillas, roll them up tightly, wrap and chill, then slice into 1-inch rounds.
- Sliders: Spoon it onto Hawaiian rolls for parties and game day.
- Crackers: Serve it with your favorite crackers as an easy appetizer.
- Lettuce wraps: Spoon it into lettuce leaves for a lighter option.
- Phyllo cups: Fill mini phyllo cups for a bite-size holiday appetizer.
How Long Does It Keep?
Keep it covered in the refrigerator. The USDA recommends eating cooked leftovers within 3 to 4 days, so if you use leftover turkey, count from the day the turkey was cooked.
Can You Freeze Leftover Turkey?
Yes. Freeze the cooked turkey plain, then thaw it in the refrigerator and make the salad when you are ready. We do not recommend freezing the finished salad, because mayonnaise does not freeze well.
